Ahh...It was just what I needed. He was also so kind to get me some wild berry tea from Rishi. Sooo yummy!! He did good. Merry CHRISTmas!!!!!

Freshly Brewed...
Last night the decision was made between the husband and I to exchange our Christmas gifts early. Lets just say I am so glad that we did! I have been drooling over one of these for awhile now and now I finally got my hands on one.

Roasted Chicken & Sweet Potatoes with Cinnamon...
This recipe has been a favorite of mine this year. It's quick, easy, cheap, and pretty darn healthy too! It only takes a few minutes to prep all of the ingredients and then your ready to cook! (This recipe makes about 2-3 servings)
(starting with above picture) Take about 2-3 medium sweet potatoes. Dice into 1 inch cubes. Toss with olive oil or coconut oil. About 1-2 tablespoons worth. Then sprinkle with 1 1/2 teaspoons of cinnamon. (or more if you like)
Sprinkle with a little salt and pepper and spread evenly on a baking sheet. (I covered mine in foil).
Now place 2 chicken breast-boneless/skinless-(which have also been oiled and coated with the salt/pepper/cinnamon mixture) on the baking sheet with the sweet potatoes. (I had already had some chicken made up from the night before, I was just reheating it a bit with the sweet potatoes) Cook at about 375-380 degrees F. for about 35-45 minutes or until potatoes are tender/caramelized and the chicken is cooked all the way through. Then enjoy!

Feeling the need for some relaxation, this is one of my favorite songs to listen to. Absolutely beautiful.
Old Salem...
In September, my family and I took a trip to Old Salem here in NC for their "Home School Days". We had so much fun and got to see a lot of really neat stuff. Here are some pictures from our trip.
