Black Bean + Roasted Sweet Potato Burritos

I love to cook, so from time to time I thought I'd share a simple recipe, sound good? As I was sitting around thinking to myself what in the world should I cook for dinner, I remembered that I had picked up some gorgeous deep purple sweet potatoes from the Asian market! I have never had the purple ones before and loved the color and I knew I had to make something with them. I had heard of people pairing black beans with sweet potatoes, it sounded like a yummy combination, so I thought burritos!

So I put my thinking cap on and thought what spiced would be good? I wanted them to have a Mexican flair, so I the obvious ingredients came to mind, cumin, chili powder, etc... But them I remembered I had bought a curry powder mix from the Asian market that contained all kinds of delicious ingredients such as cumin, coriander, chili, cinnamon, fennel, and a few more and thought that would work just fine! So came together my lovely mixture of veggies and spices and a beautiful burrito was born! I hope you all enjoy these as much as my family did!

Black Bean + Roasted Sweet Potato Burritos

(as with all of my recipes, hardly any measuring actually takes place, so just use your best judgement and make it your own! Also, feel free to replace any ingredients, just think of my recipes as guidelines!)

* 2 Sweet potatoes, diced into small cubes (any variety will work)

* Half of an onion, diced

* 1-2 Tbs Curry spice (any kind you like) or Mexican spice mix

* 2 Tbs Coconut oil (melted) or Olive oil

* 3-4 Cups cooked black beans

*Tortillas

* Prepared Salsa, Grated Cheese, Sour Cream, Lettuce, Etc...

Take your sweet potatoes and peel and dice them into small cubes. Dice up your onions. Put the sweet potatoes and onions in a roasting pan. Coat in oil and sprinkle in spices. Toss to coat.

Place roasting pan in a preheated oven at 400 degrees F.

Roast for approx. 15-25 minutes, or until tender and slightly crisp

Take the sweet potatoes out of the oven and add them to a pan along with the black beans and saute on medium heat in some butter for a few minutes.
Turn the pan off.

Now it's time to assemble!

Grab a tortilla and scoop some of the black bean + roasted sweet potato mixture in and add toppings! Easy as that! Simple, frugal, nourishing, and most importantly yummy!!!!!

This is just a little something I came up with. I have to say, I think these little Weather Pals are adorable. Cleaning Cloth Menstrual Pads

I have been using cloth menstrual pads for around 3 years and I *love* it. I have found there are many ways of cleaning cloth pads. Much like cloth diapers. It's all about personal preference. Here is my method : : after I am done with a pad, I simple wrap it up until I take my shower (which is usually more frequently done when I am on my period) and rinse them out (yes, by hand) in the shower. I ring them out as best I can, then I toss them in the wash, usually a hot wash with the towels and dry in the dryer. It's as simple as that. Now, in the past I would use Bac-Out as a pre-treatment to the pads, but for a good while now I haven't had it on hand, but today I came across a video that talks about how to wash cloth pads and they had a recipe for a very simple homemade pre-soak treatment that I love. I tweaked the recipe a bit and here is what I will be using from now on to pre-treat my cloth ::

*Cloth Mentstrual Pre-Soak*

**2 Tb hydrogen peroxide

**2 Tb liquid soap (I used lavender Dr. Bronner's)

**2 cups warm water

**10 drops of eucalyptus oil (for it's disinfecting properties)

*Add all of these ingredients into a squirt bottle/spray bottle and use to pre-treat your cloth pads

I'm really excited that I found this recipe and I hope it really helps get my pads extra clean!

Pesto-Tomato-Spinach Sandwich

*Pesto-Tomato-Spinach Sandwhich*

(recipe makes one sandwich)

I created this sandwich today with ingredients I had on hand. I hope you will try this sandwich and enjoy it as much as I did!

*Start with freshley prepared pesto, about 2 Tbs

*2-3 Tbs full fat sour cream

*Half a medium tomato, sliced

*1/4 Cup baby spinach

*1 Mini ciabatta bread loaf

*Pinch of kosher salt
(all measurements approx.)

*In a small bowl, mix the pesto with the sour cream

*Cut open the loaf of ciabatta bread

*Slather the sour cream/pesto mixture onto both halves of the bread

*layer the slices of tomato evenly on the bread

*Sprinkle the salt over the tomatoes

*Top with baby spinach

*Add on the top of the ciabatta loaf

*Enjoy!

(This sandwich would also be lovely with some mozzarella slices or provalone cheese)

Summertime is upon us and I've been making slushies! These slushies are so tasty and they require very little work. I didn't measure anything (as usual), but it's all pretty basic.

:: Water+Ice+Fruit+organic sugar+Secret Ingredient = Yummy!

Now yes, I did say sugar (organic)...it's an ingredient that you could use or just use the natural sweetness of the fruit to do the job. I however was using a lot of sour lemons in my recipes, so they required the extra sweetness in my opinion.

First up, we have the ever so yummy tropical slushie! Pineapple, strawberry, blueberry, and lemon! (a bit of coconut water/milk would be lovely in this!)

This was more simply a mixture of lemon (about 3 plus the zest of 1 or 2) and a handful off blueberries!

(Don't you just love that pale pink color?) Again, a very simple blend of strawberry and lemon! It was a toss up between the lemon-strawberry and the lemon-blueberry. They were both soooo good it was hard to decide which one was my favorite.

Oh yes, I almost forgot! My "secret ingredient" for all of these drinks are pure vanilla extract! *shhhhhhhh about 1.5 teaspoons for each recipe. Sooooo good! It really gives it a good balance and makes these slushies extra special. I hope you all are enjoying your summer and if you want, experiment with your own slushie recipes! Different fruits, using honey instead of sugar, coconut milk! I'm sure I'll be enjoying a few different ones this summer.

The Life Within All That Is...

My husband was helping prune a tree and found this lying on the ground, cut by the man he was helping. It was a part of the tree that had been previously wounded and then healed itself. When my husband picked it up, he couldn't help but notice how this piece looked remarkably like a fetus. He brought it home and showed me. I was blown away! It resembles a baby at around 4 or 5 weeks gestation. Here my younger sister is modeling the piece, amazingly enough...the day I took this picture, is the day my sister found out she was pregnant. 4 weeks pregnant to be approximate. : ) Small wonders.

This past week in my kitchen I was busy making whey. Whey is a glorious golden liquid that is beneficial to the body in so many ways. (read more about the benefits of whey here.) Making whey is so, so simple to do. To set everything up really only takes a couple of minutes once you have all of your supplies. Here's how I make whey.

First, you'll want to start with a really good whole milk organic yogurt with live cultures. (unless you have made your own, or are using raw milk...this is what I had on hand.)

Next you will want to get out your 100 percent cotton cheesecloth and open it up, leaving enough layers intact and spread it over a small non-metal bowl, pour in your yogurt and gather the end up of the cheesecloth securely wrap a rubber band around the top. Carefully slip in the handle of a wooden spoon through a couple of the rubber band loops (as seen in the picture). Gently lift the cheesecloth wrapped yogurt and place over a deeper container. (I put mine over a plastic pitcher, with the ends of the wooden spoons being the support.) Now you wait. Mine drained for about 6 hours. You could certainly strain for longer, but this amount of time gave me about 1 pint of whey.

Just look and those little dropplets of goodness!

After the whey has been strained completely from the yogurt, you'll want a nice clean mason jar to store it in.

Mmm...

There you have it! You've made whey! Now how easy was that?

Also, one of the best parts about making whey is....the yummy cream cheese you have after the draining is done! Here I have taken the cream cheese and added some fresh rosemary, turmeric, raw garlic, salt & pepper for a yummy spread.

And with all that whey I just had to start a nice batch of lacto-fermented salsa! I can't wait to try it. What are you making in your kitchen?

A Walk In The Woods...

This past weekend, my family and I enjoyed a nice walk at Hemlock Bluffs Nature Preserve. Besides it being a bit windy outside, we had a lovely time. It was so nice to get out in nature. Hopefully there will be plenty more walks in the woods in the near future!

So much beauty to be found in this world if we just take the time to look.

* Loving each and everyday, appriciating everyday the Lord has given my family and I.

There is usually more on my mind then this....I just know there is! My mind is always racing a few steps ahead of what I am actually thinking. I'm here, and my mind is already gone, on to the next thing! It's hard to keep up with sometimes.

Well, another year older, another year wiser. It's strange. On every single one of my birthdays, I know...okay. I'm an entire year older. Today should feel different. I spend the whole day thinking it should feel different and I feel as though it doesn't, but because of that...it actually does feel different. (okay, that may not have made sense to you, but it does in my own mind...lol). It seems it takes me awhile to adjust to a new age. I'm embracing it. So yesterday I spend the whole day indulging. It felt good I must admit. The day started off with my absolute FAVORITE spot to grab a coffee and a muffin. Stick Boy Bread Company. Mmmmm....... Seriously. Then my sweetie pie husband took me out on a (kid-free) date to Natty Greene's Pub & Brewing Co. It was REALLY good. I had a lovely brew...made with chamomile! We then headed over to another one of our favorite local spots in town. Aviator Brewing Co. The place has such a good atmosphere. The weather was gorgeous for such a day. I had a truly wonderful 23rd birthday.

One of my favorite things to do is to photograph the simple beauty in everyday life. I had been using my mothers older digital camera to capture moments from my day to day life, but my dear husband decided enough was enough. He so sweetly bought me a wonderful new camera for my birthday/anniversary present. I love it!! I have hardly put it down since I opened it. Needless to say I have been snapping photos left and right. It really was the most perfect gift.

Our little space is made up of so much. Art, music, crafting tools, family heirlooms, much of these things I'm sure fill almost anyone's space. This is ours. Our unique space. A space that we hope to one day leave. We feel this is just our temporary home. We are still looking for that place where we can plant ourselves and spread our roots. It's going to happen. One day. Until then, we are trying our best to look at what we have and make it ours as much as possible. So here, ladies and gentlemen is the space we currently call home.

Last night the decision was made between the husband and I to exchange our Christmas gifts early. Lets just say I am so glad that we did! I have been drooling over one of these for awhile now and now I finally got my hands on one.

Roasted Chicken & Sweet Potatoes with Cinnamon...

This recipe has been a favorite of mine this year. It's quick, easy, cheap, and pretty darn healthy too! It only takes a few minutes to prep all of the ingredients and then your ready to cook! (This recipe makes about 2-3 servings)

(starting with above picture) Take about 2-3 medium sweet potatoes. Dice into 1 inch cubes. Toss with olive oil or coconut oil. About 1-2 tablespoons worth. Then sprinkle with 1 1/2 teaspoons of cinnamon. (or more if you like)

Sprinkle with a little salt and pepper and spread evenly on a baking sheet. (I covered mine in foil).

Now place 2 chicken breast-boneless/skinless-(which have also been oiled and coated with the salt/pepper/cinnamon mixture) on the baking sheet with the sweet potatoes. (I had already had some chicken made up from the night before, I was just reheating it a bit with the sweet potatoes) Cook at about 375-380 degrees F. for about 35-45 minutes or until potatoes are tender/caramelized and the chicken is cooked all the way through. Then enjoy!

Summer's End...

Ah, Just feast your eyes on that! Summer is almost over and even though the days of outdoor grilling will continue around here, looking at these photos just reminds me of how summer is coming to an end. (And yes, it was a chance for me to share with you my food photography obsession...lol). I am very much looking foward to the cooler weather and days spent inside baking, crafting, cooking, learning, and so much more. And hopefully even more time spent outside as well. At the end of the week, my family and I will be taking a trip to Old Salem here in NC for their Homeschool Days. I am very excited and hope to share many pictures with you. Stay tuned!

Kudzu Blossom Jelly...

This Summer has brough many wonderful things. I'm thankful to God for everthing he has created for us. That being said, Summer is almost over with and I'm glad I got the chance to make this lovely little jar of goodness. (actually it was 3 jars : ) Anywho....for those who have never heard of Kudzu, its often referred to as "the plant/vine that ate the south". Sounds kind of funny, but its true...it grows everywhere here. Ever since I moved here I have seen this plant. Taking over buildings and woods. Anything thats in it's path. However, I have never got close enough to it to realize that it has the most beautiful flowers on it. They grow in a cluster. Beautiful shades of violet. My SIL informed me that she had a bunch of Kudzu behind her house and that it was coverd in blossoms. That made me think..... My husband had told me of Kudzu jelly. I decided to look up a recipe! We spend an evening at my SIL and I spent a good amount of time hand gathering all of these wonderful blossoms. The first thing I noticed was the smell! It smelled of grapes and blueberries, but unique at the same time. I was very excited to say the least. I went home, immediately washed the flowers and began the jelly making process. (mind you, this was my first attempt at making jelly in my whole life!) The results were amazing! Its the most unique flavor. Very delicious!

~*Kudzu Blossom Jelly*~

*4 Cups of Kudzu blossoms (make sure they haven't been sprayed with chemicals)

*4 Cups of boiling water

*1 Tbs lemon juice

*1 (1 3/4 oz) Package of powdered fruit pectin

*5 Cups of sugar

Wash blossoms in cold water, strain and place in a clean bowl

Pour 4 cups of boiling water over blossoms and refrigerate for at least 6 hours

Strain liquid through a colander into a Dutch oven, discarding flowers

Add lemon juice and pectin. Bring to a full rolling boil over high heat stirring constantly

Stir in sugar, return to a full rolling boil. Boil stirring constantly for 1 minute.

Remove from heat, skim off foam with a spoon

At this point you can pour the jelly into jars to store regularly (like I did) or you can choose to can them like you normally would for preserving them for long periods of time.

Store jelly in the fridge.

**Note: The liquid will appear gray and dull before you add the lemon juice, then it will be the most amazing shade of pink!!

~*Happy Independence Day Weekend My American Friends*~

What a lovely weekend it was. Family and friends and a nice day in the park. We enjoyed the lovely music from the North Carolina Symphony and watched fireworks. It was a lot of fun. The boys especially enjoyed it. I hope that EVERYONE had a lovely weekend!!

This Summer's Goals...

I have made a new list of summer goals this year. It goes a little something like this:

* Find more time to get outdoors
* Visit the farmers market more often (check out a few different ones as well)
* Try my hand at making my own homemade laundry soap
* Learn how to be more relaxed and just enjoy myself and my family
* Find more yummy real food recipes to try out
* Take more photographs!
* Read more (especially the Bible)
* Attend church more
* Visit the city more often
* Find a good homemade bread recipe
* Experiment with different teas for yummy iced tea!
* Find more toddler friendly/eco friendly crafts for my little one to do
* Sew more
* Get more organized
* Perhaps...make myself a new skirt. (yeah, I think thats a good idea *wink)
* To overall be more patient, kind, loving, and respecting.
(Of course this list is one that I would say is "ever growing and ever changing)
A new season always brings me a feeling of being able to start over. I love that. I hope your summer goals are all met this year. Have fun!

My sweet, sweet husband bought me a snap press for christmas this year (I have been wanting one forever) and its now 4 months later and I have yet to use it. I feel really bad. I have just been so busy with our 2 year old (who, quite frankly has been driving me nuts lately...lol) and our 3 month old (Yes....R is 3 months tomorrow!!) So I havent really had time to use it. My other problem is .... ummm... I have NO idea how to use it. lol. I didnt come with instructions that I know of so I guess its up to me to seak out how to use that monster. If anyone has any suggestions or sites I could go to - to see how to use one. It would be appriciated. :) In other news....there really isnt any. ha. I just have the sewing bug hitting me a little hard right now and I wish I had the time. My mind is constantly racing with different projects I want to try, but the time just isnt there. *sigh. I do have a project to work of for a friend in a few weeks that I'll have to make time for. I'm sure it will be fine. lol. I'm really excited about it. Hope everyone is having a wonderful week. Being pregnant and NOT wanting to wait long for food...lol. I came up with a quick fix for todays' lunch. Basically its "Flat Bread Pizza". Its really yummy, super quick, and pretty healthy as well. Here is what I used: (makes 2 pizzas)
*2 Store bought Naan (Indian flatbread)
*4 Tablespoons of sundried tomato pesto (divided)
*1 cup of organic spinach (divided)
*1 cup of shredded mozzarella (divided)
*drizzle of olive oil
*I popped it in the oven at 400 degrees for about 7 minutes and then turned on the broiler for about 3 minutes, just to get the top nice and brown.

This was super yummy and its also turned out to be a great quick lunch for my 2 year old as well!!

This past week I did some searching on Etsy (of course) for a really nice birthday present to give to my husband. I new he wanted a new mug. I came across this really awesome handthrown mug with a couple of neat dancing bears of the front and a nice big piece of real cork to top it off. It's so lovely and is very well made. I thought this would be the perfect mug to get him. He loved it!! Also, The whole family (well, almost) has gotten some Baltic Amber pieces recently. They are so beautiful!! The picture below is the one bought for my son. The color scheme for this anklet is Honey and Molasass. (Yes, the amber was yet another Etsy purchase)**smile.

This is the season for wool. I LOVE wool!! Here are my latest wool projects: A pair of wool longies for Liam and a new wool hat for Rowan (when he comes). As always I used an old wool sweater found at my local thrift store and then after they are made they get a nice wash in some lanolin and Eucalan wool wash!! There is just nothing like wool!!

Fall Crafting...

So its finally my favorite time of year!! And I've been in the mood to do some crafting!! Something that I really been into lately is crafting with wool. I love it. I dabble is some needle felting crafts, but I think my favorite thing to do with wool so far is make "Wooly Soap" as I like to call it. Its a very simple craft and its so much fun! My latest "Wooly Soap" is this lovely plum and lavender colored soap. It took literally 10 minutes to complete. My little Liam is showing it off for me in the picture below. How cute. (oh and it smells really yummy too.....)

Now even though I'm not sure how often we are going to cloth diaper the little one we are expecting.....I still thought it would be a good idea to have a nice stash ready just in case. So I've sewn 2 more diapers to add to the collection. Its a very nice diaper pattern that I purchased on Etsy and I hope that when it comes time to use them, they will be perfect. Its a very versitile pattern. No serger required, no velcro, no snaps, no elastic, NOTHING!! And there is no wrong way to put this diaper on. (In other words, no front...no back). And because its fleece...its snappiable. Oh and I turned these ones into pocket diapers so I could stuff them with a regular burp cloth. I thought these would be really nice on a newborn especially. Ahh Autumn...baking, sewing, & an update.

So Its been forever since I've made it on here to post. It seems now its always an "update" because I'm never on. Oh well, I'm trying. : ) Well I'm almost 26 weeks now and I'm feeling pretty good, well, it is getting harder to move around these days. lol. I just can't believe i'm over half way through this pregnancy. I can't wait for my little Rowan Briar to get here!! Yep, we are naming him Rowan Briar!! Don't you just LOVE that name?? Well, because I am a cold weather type of person...you can imagine that this is one of my favorite times of year. I love everything about fall and winter!! The holidays that occure this time of year, the smells, just the look of it all and one of my favorite things to do is to bake. I love to cook in general, but baking this time of year really makes things special. I found a really awesome recipe lately for the most soft, chewy cookie you'll ever eat!! (the secret ingredient is ........................ pudding!!) I used chocolate pudding for this batch and I really, really liked it. So did everyone else!!

Also during this time of year I love to sew. I have been trying my hand at embroidery and its fun!! I sewed this little tree to the back of one of Liam's P.J's and I am so pleased how it came out. (My first embroidery project).

Well, I'm sure I'll be posting a whole lot more this coming season, especially with the Fair and Halloween coming up. Have a wonderful day!!

Suprise No More!!

Well I happy to tell all that I found out what I am having. I really thought I could keep myself from wanting to know. I thought it would be really neat if I found out at birth, but I just couldn't do it. I just had to know. And I'm happy to announce that its a..............................BOY!! My husband and I were totally shocked!! My whole family in fact was convinced it was going to be a girl. I liked the idea of that. Shopping for really cute little girly outfits, sewing my own, a little sister for Liam, but oh well. I am equally excited its a boy. Now Liam will have a little brother to play with and since I'm already experienced with boys, thats another plus. I just want the baby to be healthy and happy. (which so far, he is!!) I just can't wait to see his little face. Will he look like me? his daddy? or Liam? I just can't wait. : ) Well, I'm halfway to seeing him. I can't believe this pregnancy is already half over with. As some of you may already have read, I have been working on my needle felting skills and this little lady is my most recent finished project. She's only about 4 inches tall. Its my best work yet!! I still don't know all the techniques, but I'm learning by trial and error. Its very relaxing for me and in the end my child has something soft and natural to play with (although I havent let him do so much as briefly hold this one....I'm too proud of if to let him start tossing it around right now...haha). She is suppose to be a pregnant gnome, but the tummy is a little hard to see in my opinion (something I will have to work on), but all in all...I'm happy with it. Let me know what you all think!!

Also, Here below is a half quart size mason jar full of homemade laundry soap (Fels-Naptha, Borax, and Washing Soda) Very simply to make and I really like using it!! I'm just wondering if it will be safe to use on cloth diapers when my little one makes his/her entance into the world!!

So I have been trying my hand at some needle felting lately and here are just two of the few projects I have done so far. Its a little gnome and a pumpkin....I know they are not "the best", but I hope to one day get there. I have just been so inspired by the work I have seen on sites like www.etsy.com and am always saying to myself "Man those are awesome!! I want my little one to have some nice wooley toys to play with!!" So I just decided to start making them myself. I have tons more wool in the mail on its way to my eager hands!! I hope to get more pictures up soon!!

I am so sick of all this hot weather. I cant wait for there to be a chill in the air to calm my soul and lift my spirit...I think its just what I need. I cant wait to do some fall baking, brewing some cider on the stove top and watching the leaves turn outside. I was never one to feel happy by the suns golden rays, no I was always most happy when the skys are darkend or the rain is pouring. For some reason thats when I feel my best and most uplifted. I'm okay with that...to not be like everyone else. I just cant wait for these days of heat to be turned into days of chill. Cant wait to break out the wooley items and snuggle with my baby (and the one on the way)....Oh but it all seems so far away!! "Sun, Sun Go Away... Come Again Another Day!!"

Okay so I know its been forever since I've posted, and I swear I will eventually get some new pictures up here, but things have been crazy for me lately. We found out that my dad has cancer so that has obviously been on my mind a lot and also we just found out that my granny has breast cancer. : ( UGH!! to top it off I have been feeling sick during this pregnancy and all the stress at times can seem unbearable. I just try to keep my faith strong and pull through this whole ordeal, I just haven't felt like doing much at all lately. I just hope my energy and spirit pick up soon. Prayers and good thoughts would be greatly appriciated!! Just keep checking back b/c hopefully i'll have something to look at soon!! Hope all is well with you.

Sewing Diapers!!

So as some of you know I am expecting another little one and I wanted to get a head start making some cloth diapers for him/her. I found this woman on etsy ( www.respire.etsy.com ) who came up with a wonderful and very easy diaper pattern. I purchased it a few days ago and just recieved it in the mail recently and I couldnt wait to get started making them. Well here are some pictures of my first diaper using her pattern. I just loved how it came out!! The best thing about these diapers are that reversable, no back or front...just put it on, and they are a one size fits *most!! I just can't wait to use them on my new little one!!!!!!!!!!!!!

Summer Time and the Livin' is Easy...

Ahh...the sweet, simple joys of summer. This summer is especially sweet so far because I recently found out that I am pregnant. : ) I am just so thankful that by the time I am huge, it wont be so darn hot outside. (Like the last pregnancy)....Anywho... I have just been busy sleeping (thanks to the first trimester...haha) and making yummy food and sweet summer drinks. Thank goodness so far (knock on wood) that I havent really had bad morning sickness...I do get a tiny bit queasy here and there, but its nothing like last time. So here below I have posted some pictures of my super yummy "Masonades" I got the recipe from www.coldantlerfarm.blogspot.com I was so inspired that I had to make my own. I give all the credit to her!! Its now my mothers favorite lemonade...Its the only kind that doesn't give her heartburn.... Its so simple and easy and just plain yummy and perfect for summer. (making "Masonade")

My New Favorite Tea and New Pants...

I discovered that I now have a new favorite tea. Traditional Medicinals makes this tea to help with stress and tension and upset/nervous stomach and let me tell you "It Works"!! I suffer from terrible panic attacks and this tea has truely helped me. It tastes so wonderful too!! (I never had lavender in tea before drinking this and it is soooo wonderful). :) I will definatly be getting more of this.

My mama and I went to our local thrift store a few days ago and I ran across this Duck Tales child's bed sheet and knew we had to make some pajama pants out of them. We also found a pattern there for pants and *TaDa....Here they are. They are really big, but they are so comfy. (pretty funky too--just my style). haha. I think the copy right on the fabric said 1986. They are so cool!!

So now all that needs to be done is for me to slip on these pants and make a nice cuppa tea. Mmm.... Cozy.

Okay so this week has been a busy one. My Older sister Heather came for a visit. She stayed for 6 days and she is the best!! Since she is so much older than I am I didnt really get to see much of her when I was growing up so its nice for her to come and visit every once in awhile. She is an awesome Hair Stylist and so when she comes for a visit my mom, younger sister, and myself always get our hair done. (Its about time....mine was looking like a mop). haha. Also today I scored some sweet stuff at our local thrift store. My husband found a really neat little wooden truck and I found some material to sew with...along with some books and buttons...oh oh and this really neat little wooden step stool with a cow and a chicken painted on it for Liam. I tell ya....I could take all day shopping in a thrift store. Also This evening I made a wonderful California Waldorf Salad ( You can find the recipe at www.earthboundfarm.com ) and I made a really nice, very simple focaccia with some caramelized onions on top... Mmmm.... ( You can find the focaccia recipe I made and other wonderful versions at www.recipezaar.com The one I made was the highest rated focaccia recipe ). Oh and before I forget to tell you I also made some natural citrus candy using the peels of different citrus fruits. I made mine from orange and lemon peels. Oh so gooooood. Turkish Delight

Okay, so yesterday I made some turkish delight. It was pretty much a short cut recipe using gelatin, which some say is a "no-no", but ya know what.... I just dont have the time and these tasted great to me anyway and not to mention Liam LOVED them. I will be sharing these with some neighbors tonight...hopefully they like it as well. (Dont they look just too gorgeous to eat?!?!?) These were Lime and Lemon flavored.

Okay, I know its been a little while since I've updated, but my life has been really really hectic lately. We've been getting ready to move with my family, so that of course means lots and lots of packing and even more cleaning. Also I mentioned in previous posts that we were incubating chickens, well about a week and a half after all were born, and then all were dead. Unfourtunatly they didn't make it. So sad. And on that "sad" note, Our chinchilla died. She was suffering from some kind of intestinal problem we think and we tried to make arangements for her to be cared for, but she didn't stay long enough to make it. *tear. So its been a rough/busy couple of weeks. On a lighter note, we all had a wonderful Easter... (too much candy) And I hope you all did too. *Praise Jesus* . I wish everyone good health and mellow vibes. Peace.

I didnt know any better with my first son, but as far as any future sons my husband and I may have they will NOT be circumsized. I wont let what others say stand in my way!!

Here are just a few sewing projects I have done in the past. I started off trying to sew cloth diapers, but I'm just not that into that anymore. Now what I am doing for myself is making cloth pads. I origninally bought some pads from Glad Rags, but the package that I got just didnt give me enough of the big night time pads (I need the extra coverage...if ya know what I mean) so I decided to trace the pads' pattern and make some for myself (Of course I do not sell these). I'm updating a little sooner than I thought I would be, but oh well....its my blog and i'll write when I want to. (haha). So since yesterdays post my family and I have worked in our garden...putting the finishing touches on things -next up is planting some seeds- here is our line up:

Thats all I can think of at the moment...I'm sure i'm forgetting a couple. Anywho... Also since yesterday we have had at least 3 of our eggs start to hatch. We are so excited. And so I will leave you with a few pictures that I took today. Enjoy!!

So I know its been awhile since I've posted (sorry). I have been super busy. My husband and I have started to work on our garden. I've never had a garden of my own before so I'm really excited. We have been preparing a spot for our garden the past week or so. Haven't been able to do much the past few days because its been so cold and rainy, but as soon as it warms back up I hope to get back out there and fix it on up. We need to mix in some compost (store bought because we have already used up the small amount of home-made compost we had) and make sure that its not going to freeze anymore and hopefully plant some seeds after that!! (cross your fingers that this garden turns out a ton of veggies and herbs)!!. Also we have been incubating some chicken eggs that we got from my sister-in-laws homeschool group (I've been meaning to get some pictures....another time perhaps). They should start pipping around the 18th....so we're really excited to see how they turn out!!. Okay....I know its sound totally gross, but I can explain.....I swear!! As most of you know who follow this blog or have seen some of my post at MDC....know that I have dreads, well.... HAD dreads.... yesterday I had my mom brush each and everyone of them OUT!! It took about 2 hours total and I really dont regret it. I had my dreads since Dec. 23, 2008.....and I guess all I can say is they weren't really want I wanted. I just felt like a mess and I cant believe I didnt have to shave my head....Oh boy was I glad about that. I really dont know if i'll ever have dreads again, but I can say that if I do decide to have them again I am going to take better care and probably wait till my hair is a bit longer. ( Oh thats something I'm loving now is my longer hair -- oh oh and the ability to run my fingers through it!!) Now about the whole "hair ball" thing. I guess as some would figure...having dreads means not brushing your hair...rriiiighhhtt?? Well, when we brushed out my hair you can imagine all the hair that was just waiting to come out as soon as that comb touched my head.... so I was left with this HUGE ball of hair. And then I thought "well I cant just let all this hair go to waist.... LETS GET CREATIVE..... so, I pulled out my felting needle and a bit of wool and Ta-Da!! I GOT A BIG BALL OF HAIR WITH A PRETTY LITTLE SWIRLY THING AROUND IT. Okay, maybe it is a little strange....creepy perhaps, but I look at it as my little souvenir for having dreads.... haha. Well, I think its pretty cool. Now on to the yummy part of the blog (and my first set of images here). I was watching Barefoot Contessa today and OMG!! I saw her make some Italian Wedding Soup and it looked devine...so I just HAD to make some. It was a big hit. And instead of making the meatballs out of chicken/chicken sausage....I made them out of turkey/turkey sausage. It was sooooooooooo good. I am so glad I'm not a vegetarian anymore (haha). I pretty much followed along the lines of this dish being a "traditional foods" dish. At least I can say that it was a "real foods" dish. I also made some homemade wheat bread today to go with the soup. Mmmmm..... It was all so so good. Well, I hope you all enjoy these pictures and have a wonderful day!! Mmm... Such a wonderful soup!!

I totally skipped town without notice. I just came back from visiting in TN and didn't even say as much as an "I'll be back"..... Sorry folks. It was a crazy journey....my son getting sick a few times, driving allllll over the place, it being my 21st b-day, seeing graceland (from the outside)..hehe, and seeing my grandparents for what I believe will be the last time...ever. I just recieved my copy of "Wise Woman Herbal for the Childbearing Year" By Susun S. Weed in the mail today and I'm so excited!! I have been flipping through it and there are so many wonderful tips and remedies from fertility to how to get rid of cradle cap, all done naturally and all with the help from wonderful herbs. I highly recommend this book to ANY WOMAN!!

*Breaking News* The Evans family is not longer *vegetarian*, but instead have adopted a "Traditional Food Diet".

Thats right folks......after doing quite a bit of research today my husband and I have decided to stop with the vegetarian lifestyle we adopted over 3 years ago and switch to a "traditional food(s) diet" We decided that we just weren't healthy. Within the 3 years that we have been *veg we have both gained a lot of weight and just over all have been unhealthy. I have developed terrible rosacea on top of it all. I have recently talked to a bunch of moms on MDC who have bascially experienced the same things I have been going through since becoming *veg and most of them switched to a "TFD" and all feel better and are over all healthier. I have a lot of confidence that this will help my self as well as my family to living a more healthful life. I recieved a load of great advice today as well as book recomendations to get me started and I thank each and everyone of you. This will be a lifestyle learning process, and i'm excited to see the results that will come from being on this diet. "One step at a time".

(I had my first burger today -- first one in 3 years and I have to say that I'm not as disgusted as I thought I would be eating meat again, but it was different. We have decided that we will only eat all natural/organic/local BEEF. Nothing else. One thing that was perticularly hard for me to do was see my son (who is 17mo) eat meat for the first time. But as soon as he had a bite he responded with a "MMmmmmm". So I guess he was a meat eater all along. (haha). ) I will have pictures up soon of "Meat Eating Experience" (lol). **more explanations of why we went for the TFD coming up within the next few blogs so stay tuned**

The Holy Spirit and .... my dreads?

Yep, thats right...no but seriously. I just had to put this picture up (the first one) I just love this picture. I think its very powerful. I, being Catholic am very proud to say that I believe in God/Jesus. The Holy Spirit is what keeps me going. Thank you Lord for all that I have and all that I have experienced...good and bad. Everything happen for a reason. <-- That is something I believe in very much. Moving on ... Here are my dreads as of today. My husband just got done palm rolling them and I think they are looking pretty nice. I haven't used wax in awhile and I'm liking how they are coming along. I have more and more hope in my hair each day. haha. I really like washing with baking soda. I think it really tightens up the dreads nicely.

And for my next project........ I'm making a quilt!! Its a little project i'm putting together for my birthday (for myself and family to enjoy).... I will have pictures up of my whole process (soon, hopefully). I just got most of the materials today. I just loooooooove going to the fabric store and seeing all the different prints.... Its just so neat.

Here they are just like I said they would be. Pictures of the hula hoops my husband and I made. (He makes the hoops I decorate them....well, except for his...he wanted to to his own. :) It was pretty fun to decorate them. We used some different colored electric tape and put funky designs on them. It was a really fun project to do, but most of all it was fun to test them out afterwards. One of my goals that I didn't really mention was to looses some weight and I never thought about it before a few days ago that hula-hooping could be a great way to get a good work out. And I think it fits my lifestyle so much. It would be so awesome to hula-hoop to some good tunes outdoors.....(Ahh, dreamin' of summer time again)....Anyway, here are some pictures of the hoops. I've been experimenting with food lately....(Gee, like I always do). And I have been trying to perfect my tofu cooking skills. I found this recipe for blackened (spice) tofu. And it was to be grilled, well I decided to try grilling it on the George Foreman....yes, the George Foreman. And well....It gave it nice black marks, but hardly gave it a nice crispy outer later...so I decided to bake it for a little while.....That hardly did anything either...so I decided to put a little olive oil in a pan and fry it just to crisp up the outside of the tofu. And after the 3 way cooking method ... it turned out pretty darned tasty. So here is is, my 3 way tofu. (Before)

(After)---I took the tofu and made burritos out of it....complete with homemade guacamole, salsa, and some Tofutti sour cream (Guac & Salsa courtesy of my mother).

We had asian last night and my mom whipped up one of my favorite foods... Vegetarian egg rolls. sooooooooooooooooo gooooooooooooood.

Oh and remember these? HAYSTACKS!! I haven't had these since kindergarted so I decided to make some with the "crunchy noodles" (lol) that we had leftover from our asian feast. They brought me back.

And of course I had to include a picture of my man....my little man that is. Isn't he just so handsome? More pictures to come folks on my husband and my new project. HULA HOOPS!!

Goals near and far...

Everyone has goals right? Well here are a few of mine. Some I suppose are in reach, others....not so much. But I wanted to right them all down just the same. Here we go...

* Start sewing more often

* Try my hand at knitting

* Start a garden (organic of course)

* Get my dreads looking nice....it seems like they never will

* Go through all of my stuff and donate a ton of stuff. (Of course only to make room for more stuff, but I swear I plan to buy stuff that will truly stand the test of time...EX: no more plastics for my babe...instead more wood, wool, and natural materials like that.)

* Read more....more to myself and more to my little one

* Go through my really awesome craft book and try some out.

* Be in nature more often. I really do like the outdoors, but just too cold right now.

* Not to diet, but to be more healthy......

* Find more awesome, healthy, and cheap recipes to cook and feed my family.

* Do more needle felting

* Make at least one blanket for "Brady's Smile" charity. http://www.bradyssmile.com/

* On that (above) note... Go to the fabric store more often.

* Be more confident

* Be the best mama I can be.

Oh how I miss...

The warmer months. It snowed here for the first time last week and it really (finally) felt like winter, but now that, that is over with....I want the warmth to come back!! I miss terribly those warm summer nights, cool breeze flowing through the air and being with my family and not worrying so much. I can't wait especially since my little man is older now and will be able to do more things outside this summer. I just know he is going to have so much fun. But in the mean time, here is a little look back at last summer. "Getting to know nature's children"

My Dreads...

Here are my dreads as of now. About 1 month old. Looking nice I'd say. And yes that is long, undreaded hair underneath. It was too short when I started my dreads and they came undone, so I just left them that way. It doesn't bother me. I actually kind of like it.

I just got through looking at the websites of http://www.novanatural.com/ and http://www.rosiehippo.com/ and sort of picked out a "wish list" (for my son...and for me too!! :) So...here it is. (Above)-This book just looked so neat!! Its my dream someday to have a really awesome playhouse built for my children.

(Above)-I have recently just looked into the healing qualities of baltic amber. Its so lovely looking as well. I hope to get one of these for my son and for myself as well.

(Above)- I really enjoy reading books on crafting and this of the sort and this book looked great.

(Above)- This book looks so cute. I love all things wool and think that this would be really neat to read.

(Above)-Okay, who can say no to a wooden brush. This thing is just awesome.

(Above)- If you haven't already noticed (by the name of my blog) I am totally in love with all things turtles. We are the turtle family after all and these things are just too cute. I would just love to have these sitting around my house.

(Above)- When I was in Sunday school when I was very little they had a wooden play kitchen and ever since then I wanted one, well that day never came so now I want one for my little one.

(Above)- I think this is just absolutley adorable.

(Above)- Like turtles, I love all things mushrooms and these are just awesome.

(Above)- This is just so colorful and its also a kit....so you put it together yourself. Its just neat.

(Above)- This is the most adorable piece of childrens "eat ware" ever!!

(Above)-This is really really cool. I dont eat many nuts, but this is really awesome.

(Above)-I can just imagine this over my son's bed or over a homemade fort. Its just too cool.

(Above)- Now, I am a vegetarian so it might be confusing to why I would want a lambskin for my son. Its hard to explain how I feel about this, but basically I have respect for animals, I love animals. And when an animal dies......I feel like their body should not go to waste. I guess I sort of feel like its a way of honoring the animal. They provide us with warmth and food at times. I feel like the way they are killed is important. I dont believe in factory farms or horrible places like that. I dont really want to get all into it right at the moment, but I hope you catch my drift. I have never really liked meat, but have always thought animals were beautiful and something like this lambskin would be something beautiful to have around.

"Spicy Tofu Nuggets"...

Today I found a recipe for "Spicy Tofu Nuggets" off of a website called http://www.vegweb.com/ or ( http://vegweb.com/index.php?topic=10737.0 ) So I tried it out. Oh my goodness are these things good!! Yes I know they are fried, but having this once in awhile I think is perfectly fine. (yummy). Here I have posted a kind of "step by step" tutorial of making these super tasty vegan nuggets!!

(Keep in mind that I did a double batch so when you read the recipe its just for 1 block of tofu....oh and I added a few extra spices... Dried thyme, pepper, garlic salt, kosher salt, cayenne pepper). Enjoy!!

(Above)... This is what the batter should look like after you wisked the water and flour. Smooth ... Kind of like pancake batter.

(Above)... This is the tofu piece being tossed into the Panko Breadcrumb/spice mixture (yes, I used panko...I had never used it before this recipe and found it quite delicious)

(Above)... Frying the tofu nuggets. I ended up cutting these size tofu pieces in half. I thought the original size was kind of large...oh and on that note. You can also make them as thick or as thin as you would like. Depending of how "soft" you like your tofu to be. Also I didn't put so much oil in the pan that it completely drowned the tofu pieces.

(Above)... Here is the finished product after they were left to drain out the excess oil.

(Above)... And here is a piece being dipped into "Newmans Own Light Honey Mustard Dressing" Mmmm (It also tasted wonderful in some ketchup, but any dip that you like would be fine to use).

Oh man oh man...I love love love Doc Watson. I was fortunate enough to see him play 2 summers ago...When I was pregant with my son actually. It was the coolest experience. He is such a legend. His songs truely take me to another place. Such a calm voice, with such a story to tell.

Okay, these guys are AWESOME!! I actually discovered the Avett Brothers while at the GrassRoots Festival here in Silk Hope, NC in 2006. They had only been around for a little while then...nothing big time and then next thing you know they are like this huge band with this almost "cult" following. Its so funny because they are all these little "Juno" type girls and guys. You know the ones...but I cant blame them...their just great. I remember walking out onto the field where I first heard them play. SOOOOOOOOOOO much energy. I had never seen anyone play the banjo like Scott played it. Truly unique. I also saw them again when I was pregnant with my son. At the same venue as I saw Doc Watson actually. Too cool.

I really like the Grateful Dead, but I like Jerry Garcia in what I think is his true "calling". Here playing with David Grisman. I (sadly) never got to see these two play together, but I wish I could have. From Arabia...to Jenny Jenkins....to Sitting here in limbo. I just love it all. and I really enjoyed the documentary they had made on these two.

So these are pretty much my favorite people to listen to and soothe my heart. If you've never listened to any of these people, you really should. :)
